Although Dell may take the position that by having installed a new version of Windows you've voided the warranty and therefore Dell has no obligation to help you, in fact there should be no difference with respect to installing a video driver between Windows Enterprise x64 and any other 64-bit version of Windows 7. When you installed the new edition of Windows, you would have had to install all of the drivers, not just the driver for the video adapter. Did you do that?
When you say that you can't 'update' the video driver, do you mean that you already have a working video driver and want to update it or that you don't have any working video driver?
